Sweet. Tangy. Totally addictive. This strawberry kale salad with citrus vinaigrette and figs is sure to become a summer obsession.

Ingredients
Citrus Vinaigrette
⅓ cup fresh squeezed orange juice
2 TBSP fresh squeezed lemon juice
2 TBSP extra virgin olive oil
1 TBSP dijon mustard
¼ tsp salt
¼ tsp pepper
Salad Components
8 cups of chopped kale
1 cup sliced strawberries
½ cup chopped figs
1 TBSP sliced almonds
Preparation
Make the citrus vinaigrette
Combine all vinaigrette ingredients in a small bowl and whisk until well combined. (You can also place the vinaigrette ingredients in a mason jar, place the lid on the jar, and shake vigorously until well combined.)
Set the vinaigrette aside.
Prepare the salad
Wash the kale and strawberries.
Remove the kale stems by pulling the leaves off with your hands. (If you want smaller pieces, use a knife to chop into desired sizes.)
Place the kale pieces in a large bowl and use a paper towel or tea towel to remove any extra moisture.
Slice strawberries thinly using a knife.
Cut figs into quarters.
Drizzle the citrus vinaigrette over the kale leaves.
IMPORTANT: Use your hands to massage the kale leaves until they become softer, generally 30-60 seconds.
Toss in the strawberries, figs, and sliced almonds.
