Strawberry Kale Salad

About the Recipe

Sweet. Tangy. Totally addictive. This strawberry kale salad with citrus vinaigrette and figs is sure to become a summer obsession.

Ingredients

Citrus Vinaigrette

cup fresh squeezed orange juice

2 TBSP fresh squeezed lemon juice

2 TBSP extra virgin olive oil

1 TBSP dijon mustard

¼ tsp salt

¼ tsp pepper


Salad Components

8 cups of chopped kale

1 cup sliced strawberries

½ cup chopped figs

1 TBSP sliced almonds



Preparation

Make the citrus vinaigrette

  • Combine all vinaigrette ingredients in a small bowl and whisk until well combined. (You can also place the vinaigrette ingredients in a mason jar, place the lid on the jar, and shake vigorously until well combined.)

  • Set the vinaigrette aside.


Prepare the salad

  • Wash the kale and strawberries.

  • Remove the kale stems by pulling the leaves off with your hands. (If you want smaller pieces, use a knife to chop into desired sizes.)

  • Place the kale pieces in a large bowl and use a paper towel or tea towel to remove any extra moisture.

  • Slice strawberries thinly using a knife.

  • Cut figs into quarters.

  • Drizzle the citrus vinaigrette over the kale leaves.

  • IMPORTANT: Use your hands to massage the kale leaves until they become softer, generally 30-60 seconds.

  • Toss in the strawberries, figs, and sliced almonds.

  • Enjoy!

    NOTE: If you are not following a dairy free diet, the addition of goat cheese takes this salad to the next level.
